Gazpacho by Brown Dog
This is a Summer Festival of Fresh Vegetables
1 cucumber diced ½
lime juiced
1 clove garlic minced 2
Tbsp. Olive oil
1 cup celery diced 2
Tbsp. Red wine vinegar
1 cup mushrooms sliced 1
Tbsp. Tabasco
1 cup red, yellow pepper diced 4 cups V-8 juice
½ cup carrots diced 2
Tbsp. Worcestershire Sauce
4 scallions diced 1
Tbsp. basil
2 cups tomatoes diced ¼
tsp. chili powder
1 zucchini diced ½
tsp. cumin
1 tsp. honey ¼
tsp. pepper
½ lemon juiced salt
to taste
