Bread Machine Cinnamon Cranberry Bread I love to have a slice with my morning coffee
2/3 cup milk ½ cup butter (pieces) 2 large eggs 1 tsp. salt 2 ½ tsp. cinnamon (Vietnamese is best) 1/4 cup sugar 3 3/4 cup bread flour 2/3 cup Craisins 2 1/4 tsp. bread machine yeast
Place ingredients in bread machine. Select “Sweet Bread”, size and “Light Crust”. You can add the Craisins when the “mix-in” tone beeps, or just add at the beginning. If your machine runs a little hot, you may need to check it about 5 minutes before it is done, so the outside doesn’t get too brown.

Caramelized Pears & Prosciutto This is an incredible Treat!
2 Bartlett or red Bartlett pears, chopped 1 Tbsp. butter ¼ salt ½ Tbsp. cinnamon Pinch of nutmeg 1/2 cup Mascarpone cheese 2 tsp. honey 1 loaf mild bread (French) sliced Prosciutto
Saute pears in butter, salt, cinnamon & nutmeg. Allow to caramelize slowly for 10-15 minutes. In a bowl, combine Mascarpone & honey. Slice the bread on the thin side, and lightly toast. Spread Mascarpone, Prosciutto and top with pears.

Oatmeal Cookies (or w/Cranberries or Chocolate Chips)
1 cup butter 2 cups flour 1 cup white sugar 1 tsp. baking soda 1 cup packed brown sugar 1 tsp. salt 2 eggs 1 ½ tsp. ground cinnamon 1 tsp. vanilla extract 3 cups quick cooking oats 1 cup chopped pecans or walnuts Mix-ins: Dried Cranberries, Chocolate chips, walnuts
In a large bowl, cream together butter, white sugar and brown sugar. Beat in eggs one at a time, then, stir in vanilla. Combine flour, baking soda, salt and cinnamon; stir into the creamed mixture. Mix in oats, nuts or any mix-ins if desired. Roll into waxed paper in a cylinder shape and refrigerate at least 1 hour. Preheat oven to 375°. Grease cookie sheets. Cut cookies into slices about ½” thick and place 2 inches apart on cookie sheets. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring
Taco Soup This is a meal in a bowl – everyone adds their own garnish
2 lb. ground beef 1 onion, chopped 1 can Rotel tomatoes 1 16 oz can chili beans, with liquid 2 14.5 oz cans diced tomatoes 1 15 oz. can kidney beans with liquid salt & pepper to taste 1 8 oz. can tomato sauce 1 1¼ oz. pkg. taco seasoning mix 2 cups water
In a medium skillet, cook the ground beef until browned over medium heat. Drain and set aside. Place the ground beef and all other ingredients in slow cooker. Mix to blend and cook on low setting 8 hours. Serve with tortilla chips, grated cheddar, sour cream and chopped chives or green onions.
